FARMERS' MARKET PEACH SALAD

Introduction
This simple, classic summer salad is a reminder that seasonal ingredients at their very best don’t need much fussing.
Ingredients
2 ounces baby filed greens
1 peach, free stone
1 orange
8 basil leaves, small to medium
1 ounce pine nuts, toasted
2 ounces Goat Cheese, crumbled
Dressing
1 ounce Peach White Balsamic Vinegar
2 ounces Extra Virgin Olive Oil
½ tsp salt
¼ tsp white pepper

Steps
Peel and segment orange, divide evenly into four portions. Cut Peach into quarters and slice each quarter thinly.
In a pre heated 325 degree oven toast pine nuts in a small sheet pan or skillet until golden brown about 3-5 minutes. Remove from oven and sprinkle with salt.
Dressing
Combine all ingredients in mixing bowl and wisk until combines.
In a large mixing bowl add greens, oranges and peaches, toss with vinaigrette, reserve two teaspoons of vinaigrette for garnish. Arrange salad on serving plates. Garnish with fresh basil leaves, pine nuts and crumbled goat cheese. Drizzle each plate with a reserved vinaigrette. Dust each plate with fresh ground black pepper.
