GREEN PAPAYA SALAD

Introduction
Green Papaya Salad (Som Tam) is a light, fresh, colorful salad that embodies the flavors of Northeastern Thailand.
Ingredients
1 green papaya
2 garlic cloves, chopped
2-3 Thai chili peppers, seeded and diced
1/2 teaspoon salt
3 Tablespoons fish sauce
1 Tablespoon sugar
1 Tablespoon fresh lime juice
8 red grape tomatoes, cut in half
1/4 cup carrots, julienned
1/4 cup cucumber, julienned
1/3 cup roasted peanuts, rough chopped
12-15 cilantro leaves

Steps
Peel papaya using a vegetable peeler. Cut papaya in half and remove seeds using a spoon. Shred papaya with a mandolin or vegetable garter. Mix papaya with tomatoes, carrots and cucumbers.
Combine garlic, chili peppers, salt, fish sauce, sugar and lime juice, whisk until combined. Pour mixture over vegetable blend. Toss until all vegetables are coated. Allow the salad to marinate for about one hour before serving. Garnish with peanuts and fresh cilantro leaves
